Well.... technically the foils displace some water also. Albeit a relative small amount.

I have heard you need to be careful mixing carbon fiber with fiberglass because they stretch differently under stress. That can lead to separation, especially when there is foam in between them. You can always put an extra layer of fiberglass on the forward hull to beef it up a little.
